Why Make Lava Cake in an Air Fryer Oven?
An air fryer oven is a practical way to make a small dessert without heating a full-size oven. Toast mode uses intense heat for a short time, helping the outside of the cake set while preserving the soft, molten texture in the middle.
This recipe has no granulated sugar in the batter. Its sweetness comes from the dark chocolate, followed by a final dusting of confectioners’ sugar. Use 60–75% dark chocolate: lower-cacao chocolate produces a sweeter result, while 70–75% chocolate gives the dessert a darker, more intense flavor.
The key to success is not simply the five-minute timer. The batter should be baked only until the outside is set enough to unmould while the center remains soft.

Quick Recipe Overview
- Prep Time: 10 minutes
- Cook Time: 5 minutes
- Total Time: 15 minutes
- Yield: 2 chocolate lava cakes
- Course: Dessert
- Appliance: Countertop air fryer oven with Toast mode
- Temperature: 230°C / 446°F
- Cookware: Two 5–6 oz (150–180 ml) heatproof ramekins or dariole moulds
If your appliance only adjusts in 25°F increments, set it to 450°F. Use heatproof moulds and leave enough room at the top for the cakes to rise slightly.
Ingredients
- 115 g dark chocolate, 60–75% cacao (4 oz), chopped
- 115 g unsalted butter (4 oz / ½ cup), plus more for greasing
- 2 large eggs
- 2 large egg yolks
- 10 g cake flour (about 1¼ tbsp)
- A pinch of salt
- Confectioners’ sugar, for coating the moulds and serving
How to Make Chocolate Molten Lava Cake
1. Prepare the moulds
Generously grease two 5–6 oz heatproof ramekins or dariole moulds with butter. Add confectioners’ sugar, rotate each mould to coat the buttered interior, then tap out the excess.
This step matters. Lava cakes are delicate when hot, and the butter-and-sugar coating helps them release cleanly after baking.
2. Melt the chocolate
Place the chopped dark chocolate in a heatproof bowl over a pan of gently simmering water. Make sure the bowl does not touch the water. Stir until the chocolate is melted and smooth.
Add the butter to the melted chocolate and stir until completely melted. The mixture should look glossy and fluid. Remove it from the heat and let it cool slightly; it should be warm, not piping hot, before it is combined with the eggs.
3. Whisk the eggs and yolks
In a separate bowl, whisk the two whole eggs and two egg yolks until frothy. The egg yolks add richness, while the whisked eggs help form a softer cake exterior.
You do not need to whip the mixture into stiff peaks. Whisk until it becomes pale, lightly foamy, and evenly combined.
4. Combine the wet ingredients
Slowly pour the warm chocolate-and-butter mixture into the eggs while whisking continuously. Stir until the batter is smooth and uniform.
Pouring slowly helps prevent the warm chocolate mixture from cooking the eggs too quickly. Once combined, the batter should be shiny and thick but still easy to pour.
5. Add the flour and salt
Sift in the cake flour and add a pinch of salt. Fold or stir gently until no dry flour remains.
Use a light hand at this stage. The small amount of flour gives the cakes enough structure to hold their shape, but overmixing can make the center less soft.
6. Fill the moulds
Divide the batter evenly between the prepared moulds. Do not fill them all the way to the rim; leave a little room for the cakes to rise during baking.
Place the moulds on the appropriate oven rack or tray for your air fryer oven. Handle the moulds carefully, especially if they are ceramic or glass.
7. Bake in an air fryer oven
Select Toast mode and bake at 230°C / 446°F for 5 minutes.
This is the tested cooking setting from the original HYSapientia Air Fryer Oven recipe. It is intended for an oven-style air fryer and the recommended two-mould setup above.
If you are learning a new countertop model, the first-time air fryer guide covers safe setup and following the manufacturer’s instructions.
The cakes are ready when the outer edges and surface look set, while the center remains soft. If the cakes are baked for too long, they will still be chocolatey and delicious, but the molten center will become more cake-like.
8. Unmould and serve
Carefully remove the hot moulds from the air fryer oven. Let them stand briefly so they are safer to handle, then place a dessert plate on top of each mould and invert.
Lift the mould away gently. Dust with confectioners’ sugar and serve immediately.
How to Know When Lava Cake Is Done
The outside should look baked and stable enough to hold together after it is inverted. The middle should remain soft rather than fully firm.
Do not judge doneness by a toothpick test; a clean toothpick would mean the center is overbaked for a lava cake. Instead, look for set edges and a center that still appears soft.
Because air fryer ovens vary, use the stated time as the recipe’s tested setting, but observe the cakes during the final minute. Mould material, mould thickness, and rack position can affect the result.
Can I Use a Basket Air Fryer?
This recipe is written for a countertop air fryer oven with Toast mode. It has not been tested in a basket-style air fryer.
Do not use the 230°C / 446°F, 5-minute instruction as a direct conversion for a Ninja, Cosori, Philips, or similar basket appliance. Basket air fryers can heat differently, may have lower maximum temperatures, and can produce stronger direct airflow around the moulds.
For help choosing between the two formats, read the guide to drawer vs. oven-style air fryers.
A separately tested basket-air-fryer recipe is the right solution for that appliance type.
Tips for the Best Molten Center
- Use quality dark chocolate. The chocolate is the main flavor, so choose a bar you would enjoy eating by itself.
- Grease the moulds thoroughly. Butter and confectioners’ sugar are essential for cleaner release.
- Do not overbake. Five minutes is the critical tested cook time for this oven-style method.
- Serve immediately. The center begins to thicken as the cakes cool.
Serve with vanilla ice cream, berries, whipped cream, or an extra sprinkle of confectioners’ sugar.

Food Safety Note
Molten lava cake is intentionally soft in the center and contains eggs. People who are pregnant, immunocompromised, very young, or older should consider using pasteurized eggs and follow appropriate food-safety guidance.
Frequently asked questions
You can, but the result will be sweeter and less intense. Dark chocolate between 60% and 75% cacao gives the recipe its richest flavor.
The mould may not have been coated thoroughly enough. Grease it with butter first, then dust it with confectioners’ sugar before filling.
The recipe relies on the chocolate for sweetness. The final coating of confectioners’ sugar adds sweetness and helps the cakes release.
The original recipe video demonstrates baking the batter immediately. For the most reliable molten center, prepare and bake the batter fresh.
